  • 1 pound spaghetti
  • 3 cups shredded cooked chicken
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained (like Rotel)
  • 8 ounces Velveeta cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1-2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook spaghetti according to package directions until al dente. Drain well.
  • In a large skillet, melt butter over medium heat. Add onion and bell pepper and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  • In a large bowl, combine cooked spaghetti, shredded chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes and green chilies, Velveeta cheese, sautéed vegetables, Cajun seasoning, salt, and pepper. Mix well.
  • Pour the mixture into a greased 9×13 inch baking dish.
  • Sprinkle cheddar cheese over the top.
  • Bake for 25-30 minutes, or until golden brown and bubbly.
  • Let the casserole rest for 10-15 minutes before serving. Garnish with fresh parsley, if desired.
