A delightful vanilla cake studded with soft, chewy sugar cookie dough pockets, topped with fluffy vanilla buttercream.

  • 9 tablespoons unsalted butter cool room temperature
  • 3/4 cup granulated sugar
  • 1 1/2-2 tablespoons whole milk room temperature
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour heat treated
  • 1/2 teaspoon fine sea salt
  • 5 tablespoons jimmies sprinkles
  • 3/4 cup unsalted butter room temperature
  • 1 1/2 cups granulated sugar
  • 1/4 cup vegetable oil
  • 3 large eggs room temperature
  • 2 tablespoons vanilla extract
  • 1/4 cup sour cream room temperature
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk room temperature
  • 1/4 cup hot water
  • 11 sugar cookie dough balls from recipe above
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 4 tablespoons heavy cream or whole milk
  • 2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/8 teaspoon fine sea salt

Instructions

  1. Cream 9 tablespoons cool room temperature butter, 3/4 cup granulated sugar, and 1 tablespoon vanilla extract together until light and fluffy.
  2. Mix in 1 1/2 tablespoons room temperature whole milk.
  3. Mix in 1 1/2 cups all-purpose flour, 1/2 teaspoon fine sea salt, and 5 tablespoons jimmies sprinkles until just combined.
  4. If the dough is too dry, add an additional 1/2 tablespoon whole milk until the dough feels soft.
  5. Scoop the dough into 2 tbsp-sized portions.
  6. Press down the tops of each dough portion slightly.
  7. Place the dough portions on a parchment-lined baking sheet.
  8. Chill the cookie dough in the fridge until ready to use.
  9. Preheat the oven to 350°F (180°C).
  10. Line a metal 9×13 baking pan with parchment paper.
  11. Cream 3/4 cup room temperature butter, 1 1/2 cups granulated sugar, and 1/4 cup vegetable oil together for 5 minutes until light and fluffy.
  12. Mix in 3 large room temperature eggs one at a time, mixing on low speed until completely incorporated before adding the next.
  13. Mix in 1/4 cup room temperature sour cream and 2 tablespoons vanilla extract.
  14. Scrape down the bowl as needed.
  15. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, and 1 teaspoon fine sea salt.
  16. Mix in 1/3 of the dry ingredients into the wet batter.
  17. Mix in half of the 1/3 cup room temperature whole milk.
  18. Repeat, mixing in another 1/3 of the dry ingredients.
  19. Mix in the remaining half of the milk.
  20. Mix in the final 1/3 of the dry ingredients, ending with dry ingredients.
  21. With the mixer running on low speed, stream in 1/4 cup hot water.
  22. Mix until just combined; do not overmix.
  23. Spread the cake batter evenly into the prepared baking pan.
  24. Gently press 11 chilled sugar cookie dough discs into the cake batter.
  25. Use an offset spatula to carefully spread the remaining cake batter to cover the cookie dough completely.
  26. Bake for 30-40 minutes, or until a toothpick inserted into the center (avoiding cookie dough balls) comes out covered in a few moist crumbs.
  27. Let the pan cool completely on a wire rack before decorating.
  28. For the buttercream, cream 1 cup softened unsalted butter with the paddle attachment until smooth.
  29. Mix in 3 cups powdered sugar, 4 tablespoons heavy cream or whole milk, 1/8 teaspoon fine sea salt, 1/4 teaspoon almond extract, and 2 teaspoon vanilla extract on low speed until combined.
  30. Increase the speed to medium and beat for 3-4 minutes until very light and fluffy.
  31. Once the sugar cookie cake is completely cool, spread the frosting on top.
  32. Create swoops and swirls with the back of a spoon.
  33. Decorate with any remaining cookie dough balls (rolled into small balls), extra sugar cookies, or sprinkles.
