  • 2 and 1/2 cups all purpose flour
  • 2 Tablespoons granulated sugar
  • 2 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cut into small cubes
  • 1 cup fresh cranberries, chopped (leave a few whole)
  • Zest from one orange, divided (reserve 2 teaspoons for glaze)
  • 1 cup buttermilk
  • 1 large egg, lightly beaten
  • Glaze
  • 2 teaspoon orange zest
  • 1 cup powdered sugar
  • 2 Tablespoons orange juice

Instructions

  1. Preheat oven to 425°F.
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl, whisk together the all purpose flour, granulated sugar, baking powder, baking soda, salt, and the main portion of orange zest (reserving 2 teaspoons for the glaze).
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Add the buttermilk and stir with a fork until a soft dough forms.
  6. Fold in the chopped cranberries.
  7. Lightly flour your hands.
  8. Press the dough into a ball.
  9. Sprinkle your work surface with a little all purpose flour.
  10. Knead the dough 6 to 8 times.
  11. Pat the dough into a ten-inch circle.
  12. Cut the dough into 8 wedges using a pastry cutter, sharp knife, or pizza cutter.
  13. Separate the wedges and place them on the prepared baking sheet.
  14. Brush the tops of the scones with the lightly beaten egg.
  15. Bake in the preheated oven for 13 to 16 minutes, or until golden brown.
  16. Move the baked scones to a wire cooling rack.
  17. Cool for a few minutes before glazing.
  18. To make the glaze, combine the powdered sugar, orange juice, and the reserved 2 teaspoons of orange zest in a small bowl.
  19. Stir until smooth.
  20. Adjust consistency by adding a little more powdered sugar or orange juice if needed.
  21. Use a spoon to drizzle the glaze on top of each scone.
  22. Serve and enjoy!

Notes

Ensure your butter is very cold and cut into small cubes for the flakiest scones.
Avoid overmixing the dough; mix just until combined to keep the scones tender.
For best results, use fresh cranberries and orange zest for vibrant flavor.
If you don’t have buttermilk, combine 1 cup milk with 1 tablespoon lemon juice or white vinegar and let sit for 5 minutes.
