  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 2 cups whole milk
  • ½ – 1 cup spiced rum or bourbon (Optional)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon freshly grated nutmeg
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • Pinch of salt
  • 1/4 cup maple syrup

Instructions

  • In a saucepan, whisk together the egg yolks and sugar until light and creamy.
  • Gradually whisk in the heavy cream and whole milk.
  • Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 170-175°F or 77-79°C). Be careful not to boil.
  • Remove from heat and stir in the vanilla extract, nutmeg, cinnamon, cloves, salt, and maple syrup.
  • If using, stir in the spiced rum or bourbon.
  • Let the eggnog cool slightly, then chill in the refrigerator for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  • Before serving, whip the egg whites until stiff peaks form. Gently fold them into the chilled eggnog.
  • Garnish with freshly grated nutmeg and a cinnamon stick.
