  • 6 large eggs
  • 1/2 cup diced ham
  • 1/2 cup shredded Gruyere cheese
  • 1/2 cup shredded cheddar cheese
  • 1 medium onion, thinly sliced
  • 1/4 cup milk or cream
  • 1 tablespoon olive oil
  • Salt & pepper to taste
  • Optional: Fresh herbs (chives, parsley), red pepper flakes, nutmeg

Instructions

  • Preheat oven to 375°F (190°C). Place an oven-safe skillet or baking dish in the oven while it preheats.
  • Heat olive oil in a skillet over medium-low heat. Add onions and cook until caramelized, about 20-30 minutes. Stir occasionally.
  • While onions are caramelizing, whisk eggs in a bowl until pale yellow and slightly frothy. Add milk or cream, salt, and pepper. Whisk to combine.
  • Remove preheated skillet from the oven. Pour egg mixture into the skillet. Sprinkle with ham and cheeses.
  • Bake for 25-30 minutes, or until the center is set but still slightly jiggly. It will continue to cook as it cools.
  • Let the frittata cool slightly before slicing and serving.
