Flaky puff pastry filled with savory, seasoned pork sausage, baked until golden and puffed. Perfect for an easy appetizer or light meal.

  • 1 lb pork sausage
  • 1 17.3 oz 2 pack box puff pastry
  • 2 eggs divided
  • 1/2 cup breadcrumbs
  • 2 Tbs parsley
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • Pinch of pepper
  • 1 tbs Water

Instructions

  1. Defrost puff pastry according to package directions.
  2. Preheat oven to 425 degrees F (220 degrees C).
  3. Line a large baking sheet with parchment paper.
  4. In a bowl, mix together pork sausage, breadcrumbs, 1 egg, thyme, parsley, onion powder, garlic powder, salt, and pepper.
  5. Section the sausage mixture into 6 equal portions.
  6. On a lightly floured surface, unfold the puff pastry dough.
  7. Gently roll out the pastry dough slightly to make it a little thinner.
  8. Cut the pastry dough into 3 long rectangle sections.
  9. Place one portion of sausage down the center of each pastry section, leaving about an inch of pastry on either side.
  10. Bring the sides of the pastry together over the sausage.
  11. Pinch the pastry edges firmly to seal.
  12. Pat down the sealed pastry slightly.
  13. Repeat with the remaining sausage and dough.
  14. Cut each long sausage log into 6 equal portions, about 2 inches long.
  15. Pierce the top of each sausage roll 2 times with a knife to create venting holes.
  16. Place the sausage rolls 2 inches apart on the prepared baking sheet.
  17. In a small bowl, whisk together the remaining egg and 1 tablespoon of water.
  18. Brush the egg wash generously on top of each sausage roll.
  19. Bake in the preheated oven for about 20 minutes.
  20. Bake until the pastry is puffed and the tops are golden brown.

Notes

Ensure puff pastry is fully defrosted but still cold for easy handling.
Don’t overmix the sausage filling to keep it tender.
Use parchment paper for easy cleanup and to prevent sticking.
For best results, pinch the pastry edges firmly to seal the sausage inside.
