Rich, fudgy red velvet brownies swirled with a creamy, tangy cheesecake topping for an irresistible dessert.

  • 150 g unsalted butter
  • 275 g caster sugar
  • 2 tsp vanilla extract
  • 1 tsp red food colouring
  • 4 medium eggs
  • 30 g cocoa powder
  • 125 g plain flour
  • 1 tsp white wine vinegar
  • 250 g full-fat soft cream cheese
  • 75 g caster sugar
  • 1 tsp vanilla extract
  • 1 egg yolk

Instructions

  1. Preheat your oven to 180ºC/160ºC fan.
  2. Line a 9×9" square tin with parchment paper.
  3. In a large bowl, beat together the butter and 275g caster sugar until combined.
  4. Add in 2 tsp vanilla extract and red food colouring.
  5. Mix again until fully incorporated.
  6. Add in the 4 medium eggs, one at a time, mixing well after each addition.
  7. Add in the cocoa powder and plain flour.
  8. Mix until just combined.
  9. Finally, add in the white wine vinegar.
  10. Stir through the brownie mixture.
  11. In a separate bowl, add the full-fat soft cream cheese.
  12. Mix to loosen the cream cheese slightly.
  13. Add 75g caster sugar and 1 tsp vanilla extract to the cream cheese.
  14. Mix together until smooth.
  15. Add the egg yolk to the cream cheese mixture.
  16. Mix through until fully combined.
  17. Pour 90% of the brownie mixture into the prepared lined tin.
  18. Dollop spoonfuls of the cream cheese mix over the brownie layer.
  19. Dollop the last little bit of brownie mix over the cream cheese.
  20. Swirl the mixtures together gently with a knife or skewer for a marbled effect.
  21. Bake in the oven for 28-35 minutes, or until a toothpick inserted comes out with moist crumbs.
  22. Leave the brownies to cool completely in the tin.
  23. Set the cooled brownies in the fridge for at least an hour, or preferably overnight, before slicing.

Notes

Ensure all cold ingredients like butter and cream cheese are at room temperature for smooth mixing.
Do not overmix the brownie batter once flour is added to keep them fudgy.
For clean slices, chill the brownies thoroughly before cutting.
Use a gel food coloring for a more intense red color.
