A delightful and easy no-cook breakfast, these overnight oats taste like pumpkin pie and are packed with protein.

Ingredients

  • ½ cup old fashioned rolled oats
  • ½ tablespoon ground flaxseed
  • ½ teaspoon pumpkin pie spice
  • 1 scoop vanilla collagen powder
  • ¼ cup pumpkin purée (NOT pumpkin pie filing)
  • ½ mashed spotty brown banana
  • ½ cup unsweetened almond milk
  • toppings of choice (e.g., Greek yogurt and chopped pecans)

Instructions

  1. Combine all ingredients except for the toppings in a bowl.
  2. Stir the mixture well until thoroughly combined.
  3. Pour the mixture into a jar with a lid or an airtight container.
  4. Store the jar or container in the fridge overnight, or for at least 4-6 hours.
  5. The next morning, remove from the fridge.
  6. Top with your desired toppings before serving.

Notes

Use a very ripe, spotty banana for natural sweetness.
For best results, allow oats to soak overnight.
Ensure you use pure pumpkin purée, not pie filling.
If oats are too thick, add a splash of almond milk before serving.
