  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt

  • 2 tablespoons Cornstarch
  • 3-4 drops Pink Gel Food Coloring (for cookies)
  • 2 cups Powdered Sugar
  • 3 tablespoons Fresh Lemon Juice
  • 1-2 tablespoons Milk
  • 2-3 drops Pink Gel Food Coloring (for glaze)

Instructions

  • Preheat your oven to 375°F (190°C). Line several baking sheets with parchment paper or silicone mats.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, cornstarch, and salt.
  • In a large mixing bowl, using an electric mixer on medium speed, cream together the softened unsalted butter and granulated sugar until light, fluffy, and pale in color, about 2-3 minutes.
  • Crack in the large egg, add the fresh lemon zest, pure vanilla extract, and a few drops of pink gel food coloring. Mix until just combined, scraping down the sides of the bowl.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix. Gently fold in the fresh lemon juice.
  • Take spoonfuls of dough, about 1.5-2 tablespoons each, and roll them into smooth balls. Place these dough balls about 2 inches apart on your prepared baking sheets. For a slightly flatter cookie, gently press down on each ball.
  • Bake for 8-10 minutes, or until the edges are lightly golden and the centers are still soft and puffy. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • While cookies cool, whisk together the powdered sugar, fresh lemon juice, and a tablespoon of milk in a medium bowl. Add more milk incrementally, 1/2 teaspoon at a time, until you reach a smooth, pourable, yet thick consistency. Add a few drops of pink gel food coloring and mix until completely smooth and uniformly colored.
  • Once cookies are completely cool, place a wire rack over a sheet of parchment paper or foil. Dip the top surface of each cooled cookie into the glaze, allowing excess to drip off. Alternatively, spread the glaze evenly with a spoon or offset spatula. Transfer glazed cookies to the wire rack to allow the glaze to set (30-60 minutes).
