Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (20 ounce) can pineapple rings, drained and patted dry
  • 1/2 cup brown sugar
  • 24 maraschino cherries, halved (optional)

Instructions

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Cover the dough and chill in the refrigerator for at least 30 minutes.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets.
  • Place a pineapple ring on top of each cookie and gently press it into the dough.
  • Sprinkle brown sugar inside the pineapple ring.
  • Place a maraschino cherry half in the center of each pineapple ring (optional).
  • Bake for 10-12 minutes, or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
