2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup vegetable oil
1 cup buttermilk
1 large egg
1 teaspoon vanilla extract
2 cups fresh cranberries, coarsely chopped
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, and salt.
In a separate bowl, whisk together the sugar, oil, buttermilk, egg, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined.
Gently fold in the chopped cranberries and nuts (if using) into the batter. Be careful not to overmix.
Let the batter rest for 10-15 minutes.
Pour the batter into the prepared loaf pan and spread it evenly.
