Adorable individual apple pies with a tender, spiced apple filling and a flaky shortcrust pastry, perfect for any occasion.

  • 2 Large apples peeled and finely diced
  • 40 g Salted butter
  • 50 g Brown sugar
  • 1-2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 2 tbsp Fresh lemon juice
  • 1/2 tsp Cornflour cornstarch
  • 3 tsp Cold water for slurry
  • 2 Sheets Frozen shortcrust pastry thawed but cold
  • 1 Large egg whisked (for glazing)

Instructions

  1. In a medium saucepan, combine the chopped apples, butter, brown sugar, cinnamon, nutmeg, and lemon juice.
  2. Simmer over medium heat until the apples are tender.
  3. In a small cup, mix the cornflour with cold water to create a smooth slurry.
  4. Stir the cornflour slurry into the apple mixture in the saucepan.
  5. Continue to stir until the apple mixture has thickened.
  6. Remove the saucepan from the heat.
  7. Allow the apple filling to cool completely.
  8. Preheat your oven to 180°C (356°F).
  9. Line a baking sheet with parchment paper.
  10. Take the first sheet of thawed shortcrust pastry.
  11. Cut out 9 large rounds from this pastry sheet.
  12. Take the second sheet of thawed shortcrust pastry.
  13. Cut this second sheet into 1.5cm wide strips for the lattice topping.
  14. Place 1 tablespoon of the cooled apple filling onto the center of each pastry round.
  15. Lay the pastry strips across the filling in a lattice pattern (typically 2 parallel strips, then 2 perpendicular strips).
  16. Trim any excess pastry strips from the edges of the rounds.
  17. Use a fork to crimp and seal the edges of each mini pie.
  18. Brush the lattice top and edges of the pies with the whisked egg.
  19. Bake for 20–25 minutes until the pastry is golden brown and crisp.
  20. Let the mini pies cool slightly on a wire rack before serving.

Notes

Ensure the apple filling is completely cool before assembling to prevent soggy pastry.
Use a cookie cutter for uniform pastry rounds.
Don’t overfill the pies; 1 tablespoon of filling is plenty.
Brush generously with egg wash for a beautiful golden crust.
