Ingredients

  • 225g (1 ¾ cups) All-Purpose Flour
  • 75g (⅓ cup) Granulated Sugar
  • ¼ teaspoon Salt
  • 175g (¾ cup) cold and cubed Unsalted Butter
  • 397g (1 can) Sweetened Condensed Milk
  • 2 tablespoons Golden Syrup
  • 50g (¼ cup) Unsalted Butter
  • 50g (¼ cup) Granulated Sugar
  • Pinch Salt
  • 200g (7 oz) good quality Dark Chocolate
  • 1 teaspoon Vegetable Oil
  • Green Candy Melts for decorating
  • Sprinkles for decorating

Instructions

  • Make the Shortbread Base: Preheat oven to 325°F (160°C). In a bowl, combine flour, sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press firmly into an ungreased 9×13 inch baking pan. Prick all over with a fork. Bake for 20-25 minutes, or until lightly golden.
  • Prepare the Caramel Layer: In a saucepan, combine sweetened condensed milk, golden syrup, butter, sugar, and salt. Cook over medium-low heat, stirring constantly, until the mixture is a rich golden-brown color and thick enough to coat the back of a spoon (about 15-20 minutes). Pour over the baked shortbread and spread evenly.
  • Add the Chocolate Topping: Melt dark chocolate with vegetable oil in a double boiler or microwave. Stir until smooth. Pour over the caramel layer and spread evenly. Decorate with green candy melts and sprinkles while the chocolate is still wet.
  • Chill and Cut: Refrigerate for at least 2 hours, or until the chocolate is set. Use a Christmas tree cookie cutter to cut out trees. If you don’t have a cookie cutter, cut into squares and then triangles to form trees.
