Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 pound fettuccine pasta
  • 1 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (or to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  • Add sun-dried tomatoes and red pepper flakes to the skillet. Cook for another minute, stirring occasionally.
  • Pour in chicken broth and deglaze the pan, scraping up any browned bits from the bottom.
  • Add heavy cream and Parmesan cheese to the skillet. Stir until the cheese is melted and the sauce is smooth.
  • Simmer the sauce for a few minutes to thicken, stirring occasionally.
  • Slice the cooked chicken breasts and add them back to the skillet with the sauce.
  • Meanwhile, cook pasta according to package directions until al dente. Drain the pasta and add it to the skillet with the sauce and chicken.
  • Toss everything together until well combined and coated in the sauce.
  • Garnish with fresh basil or parsley and serve immediately.
