  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 32 ounces cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1/4 cup freshly squeezed lime juice
  • Zest of 2 limes
  • 1/4 cup tequila
  • 2 tablespoons triple sec or other orange-flavored liqueur
  • 1/4 teaspoon salt
  • Whipped cream and lime slices, for garnish

Instructions

  • Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter. Press onto the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
  • In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, beating until well incorporated. Add eggs one at a time, mixing well after each.
  • Stir in lime juice, lime zest, tequila, triple sec, and salt. Mix until smooth and creamy.
  • Pour filling over the crust and spread evenly. Tap the pan on the countertop to remove air bubbles.
  • Bake for 55-60 minutes until the center is set and the top is lightly golden.
  • Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Top with whipped cream and lime slices before serving.
