Soft and chewy cookies bursting with hot chocolate flavor, gooey marshmallows, and a delightful chocolate drizzle.

  • 1 cup butter room temperature
  • 1 cup brown sugar
  • 3/4 cup hot cocoa mix dry
  • 2 teaspoons instant coffee or espresso powder optional, enhances chocolate flavor
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups all‑purpose flour
  • 1 teaspoon baking soda
  • 1 cup chocolate chips
  • Mini marshmallows
  • Chocolate for drizzling about 1/2 cup chocolate chips, melted
  • Sprinkles optional

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper and set them aside.
  3. In a large bowl, cream the room temperature butter and brown sugar together until the mixture is light and fluffy.
  4. Add the dry hot cocoa mix, instant coffee or espresso powder (if using), room temperature eggs, and vanilla extract.
  5. Stir the mixture until it is smooth and well combined.
  6. Gradually mix in the all-purpose flour and baking soda until no dry pockets of flour remain.
  7. Be careful not to overmix the dough.
  8. Fold in the 1 cup of chocolate chips until evenly distributed.
  9. Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheets.
  10. Ensure the cookies are spaced well apart, about 6 cookies per sheet.
  11. Bake for 10–11 minutes, or until the edges are set but the centers still appear soft.
  12. Immediately after removing the cookies from the oven, gently press the back of a spoon into the center of each cookie to create a small indentation.
  13. Press a few mini marshmallows into each indentation.
  14. Let the cookies cool on the baking sheet for 5 minutes.
  15. Transfer the cookies to a wire rack to cool completely.
  16. Once completely cooled, melt about 1/2 cup of chocolate chips for drizzling.
  17. Drizzle the melted chocolate over the cooled cookies.
  18. Optionally, top with sprinkles before the chocolate sets.

Notes

Always use room temperature butter and eggs for the best texture.
Do not overmix the dough once the flour is added to keep cookies tender.
Bake until edges are set but centers are still soft for a chewy cookie.
Press marshmallows into hot cookies immediately after baking for best results.
