Soft, chewy, and perfectly spiced vegan pumpkin cookies, ideal for fall and Halloween celebrations.

  • 1/2 cup vegan butter, softened
  • 1/4 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1/2 cup organic cane sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon sugar, for topping

Instructions

  1. In a large bowl, cream together the softened vegan butter, pumpkin puree, brown sugar, organic cane sugar, and vanilla extract until light and fluffy.
  2. In a separate large bowl, whisk together the all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  4. Cover the bowl with the dough and place it in the fridge for at least 30 minutes.
  5. Preheat the oven to 350 degrees Fahrenheit (177 C).
  6. Place a large piece of parchment paper on a flat surface.
  7. Scoop half of the chilled cookie dough onto the center of the parchment paper.
  8. Place another piece of parchment paper on top of the dough.
  9. Roll out the dough between the 2 pieces of parchment paper until it’s about 1/4-inch thick.
  10. Cut out desired shapes with Halloween cookie cutters.
  11. Arrange the cut-out cookies a couple of inches apart on a large parchment-lined baking sheet.
  12. If the dough is too soft to transfer, place the parchment with cutouts into the freezer for 10 minutes to solidify.
  13. Bake on the center rack for 6 to 8 minutes.
  14. Allow the cookies to cool down completely on the baking sheet.
  15. Sprinkle cinnamon sugar on top of the cooled cookies.
