Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
Add chopped onion and cook until softened, about 3-5 minutes. Add minced garlic and ginger and cook for another minute until fragrant.
Stir in coleslaw mix and shredded carrots. Cook until the cabbage is slightly wilted, about 5-7 minutes.
In a small bowl, whisk together soy sauce (or tamari), rice vinegar, sesame oil, and sriracha (if using).
Pour the sauce over the turkey and vegetable mixture. Stir well to combine. Bring to a simmer and cook for a few minutes to allow the flavors to meld together.
Garnish with sliced green onions and sesame seeds. Serve hot.
