  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 (16 ounce) bag coleslaw mix
  • 1 cup shredded carrots
  • 1/4 cup soy sauce (or tamari)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)
  • 2 green onions, sliced, for garnish
  • 1 tablespoon sesame seeds, for garnish
  • Instructions

  • Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  • Add chopped onion and cook until softened, about 3-5 minutes. Add minced garlic and ginger and cook for another minute until fragrant.
  • Stir in coleslaw mix and shredded carrots. Cook until the cabbage is slightly wilted, about 5-7 minutes.
  • In a small bowl, whisk together soy sauce (or tamari), rice vinegar, sesame oil, and sriracha (if using).
  • Pour the sauce over the turkey and vegetable mixture. Stir well to combine. Bring to a simmer and cook for a few minutes to allow the flavors to meld together.
  • Garnish with sliced green onions and sesame seeds. Serve hot.
