A delightful and fresh parfait featuring warm, cinnamon-spiced grilled peaches, creamy yogurt, and crunchy granola.

Ingredients

  • 4 ripe peaches
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar or coconut sugar
  • ½ teaspoon ground cinnamon
  • Vegetable oil, for brushing or spraying grill
  • 2 cups greek yoghurt or plant based yoghurt, for serving
  • 2-4 tablespoons honey or maple syrup for serving
  • 1 cup granola, for serving
  • ½ cup blueberries
  • ¼ cup Remix Snacks Chocolate Bean Bark with peach chunks, chopped for serving
  • Fresh mint leaf, for garnish (optional)

Instructions

  1. Set your grill to medium-high heat, or spray a cast-iron grill pan with cooking spray and heat over medium heat.
  2. Halve each peach and carefully remove the pit.
  3. Cut each peach half into 3 wedges.
  4. In a small bowl, mix together the granulated sugar, brown sugar (or coconut sugar), and ground cinnamon.
  5. Press the cut side of each peach wedge into the sugar mixture to coat it evenly.
  6. Place the coated peach wedges cut side down on the hot grill or grill pan.
  7. Cook the peaches until grill marks form and they are slightly softened, about 2 to 3 minutes per side.
  8. Remove the peaches from the grill and let them cool down.
  9. If desired, cut the cooled fruit into smaller wedges.
  10. Divide the yogurt equally among 4 small bowls, cups, or jars.
  11. Evenly divide the grilled peaches, blueberries, and granola among the bowls.
  12. Drizzle each parfait with 2-4 tablespoons of honey or maple syrup, to taste.
  13. Sprinkle the chopped Remix Snacks Chocolate Bean Bark over each parfait.
  14. Garnish with a fresh mint leaf, if using, before serving.

Notes

Choose ripe but firm peaches for the best grilling results.
Don’t overcrowd the grill; cook peaches in batches if necessary.
Adjust the amount of honey or maple syrup to your personal sweetness preference.
For a dairy-free option, ensure your yogurt, granola, and chocolate bark are plant-based.
