  • 3 cups Gluten-Free All-Purpose Flour Blend (containing rice flour, tapioca starch, and potato starch)
  • 1/4 cup Tapioca Starch
  • 1/4 cup Potato Starch
  • 1 teaspoon Xanthan Gum
  • 2 tablespoons Sugar
  • 2 1/4 teaspoons Instant Yeast
  • 1 teaspoon Salt
  • 1 cup Warm Milk (dairy or non-dairy, around 105-115°F)
  • 1/4 cup Butter, melted (or vegan butter)
  • 2 large Eggs
  • 1 teaspoon Apple Cider Vinegar
  • 1/2 teaspoon Baking Soda

Instructions

  • In a large bowl, whisk together the gluten-free flour blend, tapioca starch, potato starch, xanthan gum, sugar, instant yeast, and salt.
  • In a separate bowl, combine the warm milk, melted butter, eggs, apple cider vinegar, and baking soda. Whisk until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Cover the bowl with plastic wrap and let the dough rise in a warm place for about 30 minutes, or until slightly puffy.
  • Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
  • Using lightly floured hands, gently shape the dough into 12 equal-sized rolls and place them in the prepared baking pan.
  • Cover the pan with plastic wrap and let the rolls rise in a warm place for another 20 minutes.
  • Brush the rolls with an egg wash (1 egg beaten with 1 tablespoon of water) for a golden brown color (optional).
  • Bake for 20-25 minutes, or until the rolls are golden brown and a toothpick inserted into the center comes out clean.
  • Let the rolls cool slightly in the pan before serving.
