  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 large egg, room temperature
  • 1/2 cup eggnog
  • 1 teaspoon rum extract
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  • Beat in the egg, eggnog, and rum extract until well combined.
  • In a separate bowl, whisk together the flour, nutmeg, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Chill the dough for at least 2 hours (or overnight).
  • Roll the dough out on a lightly floured surface to about 1/4 inch thickness.
  • Cut out cookies using your favorite holiday cookie cutters.
  • Place cookies on the prepared baking sheets, leaving about 1 inch between each cookie.
  • Bake for 8-10 minutes, or until the edges are just lightly golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Decorate with powdered sugar, eggnog glaze, or festive sprinkles, if desired.
