- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1 large egg, room temperature
- 1/2 cup eggnog
- 1 teaspoon rum extract
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the egg, eggnog, and rum extract until well combined.
- In a separate bowl, whisk together the flour, nutmeg, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Chill the dough for at least 2 hours (or overnight).
- Roll the dough out on a lightly floured surface to about 1/4 inch thickness.
- Cut out cookies using your favorite holiday cookie cutters.
- Place cookies on the prepared baking sheets, leaving about 1 inch between each cookie.
- Bake for 8-10 minutes, or until the edges are just lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Decorate with powdered sugar, eggnog glaze, or festive sprinkles, if desired.
