Ingredients

  • Mixed Greens (baby spinach, arugula, or mixed greens)
  • Fresh or Dried Cranberries
  • Apples (Honeycrisp, Fuji, or Granny Smith)
  • Pecans or Walnuts
  • Feta or Goat Cheese (Optional)
  • Red Onion
  • Pomegranate Seeds (Optional)
  • Olive Oil
  • Apple Cider Vinegar
  • Maple Syrup or Honey
  • Dijon Mustard
  • Salt
  • Pepper

Instructions

  • Toast the pecans or walnuts at 350°F (175°C) for 5-7 minutes, or until fragrant.
  • Chill the salad ingredients before assembling.
  • Prepare the dressing by whisking together olive oil, apple cider vinegar, maple syrup or honey, Dijon mustard, salt, and pepper.
  • In a large bowl, combine the mixed greens, cranberries, apples, pecans or walnuts, feta or goat cheese (optional), red onion, and pomegranate seeds (optional).
  • Dress the salad just before serving.
  • Toss gently to combine.
  • Adjust sweetness of the dressing to your preference.
  • Serve immediately.
