- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the egg yolk and vanilla extract until well combined.
- Gradually add the flour and salt, mixing until just combined. Be careful not to overmix.
- Form the dough into a disc, wrap it tightly in plastic wrap, and chill for at least 2 hours, or preferably overnight.
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Use cookie cutters to cut out desired shapes. Dip cookie cutters in flour to prevent sticking.
- Place cookies onto the prepared baking sheet, leaving a little space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Decorate as desired.
