  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Green food coloring
  • Sprinkles (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Add a few drops of green food coloring to the dough, adjusting the color as needed to reach your desired shade of green.
  • Roll the dough into balls and place them on the prepared baking sheet. Flatten each ball with the bottom of a glass.
  • If using sprinkles, decorate the cookies with a sprinkle of your choice.
  • Bake for 8-10 minutes, or until the edges are set and just lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
