  • 200 grams of granulated sugar
  • 50 grams of unsweetened cocoa powder
  • 115 grams of butter (or margarine for dairy-free)
  • 2 large eggs
  • 240 ml of buttermilk (or mixture of milk and vinegar)
  • 150 grams of sweetened coconut flakes
  • 200 grams of marshmallow fluff

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, mix the flour, sugar, and cocoa powder.
  • Cream the butter until light and fluffy, then add the eggs one at a time, mixing well after each.
  • Alternately add the buttermilk and dry ingredients to the butter mixture, beginning and ending with the dry ingredients.
  • Pour the batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove cake from oven and cool on a wire rack.
  • Once cooled, spread marshmallow fluff over the cake and sprinkle coconut flakes generously to cover.
  • Chill in the fridge for at least an hour before serving.
