  • 3 lbs. corned beef brisket
  • 1 head of green cabbage, cut into wedges
  • 5 large carrots, peeled and chopped
  • 1 lb. baby potatoes, halved
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 4 cups beef broth
  • 1 tablespoon whole grain mustard
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

1. Place the sliced onions, minced garlic, and bay leaves in the bottom of the crockpot.

 

 

2. Place the corned beef brisket on top of the onions and garlic, fat side up.

 

 

3. Spread the whole grain mustard over the top of the corned beef brisket.

 

 

4. Arrange the cabbage wedges, chopped carrots, and halved baby potatoes around the corned beef brisket.

 

 

5. Season everything with salt and pepper to taste.

 

 

6. Pour the beef broth over the ingredients in the crockpot.

 

 

7. Cover and cook on low for 8 hours or until the corned beef is tender.

 

 

8. Once cooked, remove the corned beef from the crockpot and let it rest for 10 minutes before slicing.

 

 

9. Serve the sliced corned beef with the vegetables and broth from the crockpot.
