  • 28 ounces crushed tomatoes

  • 4-6 cups chicken broth
  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 15 ounces ricotta cheese, whole milk or part-skim
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Brown the ground meat in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
  • Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  • Add the lasagna noodles to the soup and cook until tender, about 8-10 minutes.
  • Stir in the ricotta cheese, mozzarella cheese, and heavy cream. Cook until the cheeses are melted and the soup is creamy.
  • Serve hot, garnished with grated Parmesan cheese and fresh basil.
