Instructions

  • Cook the pasta according to package directions until al dente. Drain and set aside.
  • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  • Gradually whisk in the milk until the roux is completely smooth. Bring to a simmer, stirring constantly, until the sauce thickens slightly.
  • Reduce the heat to low. Add the cheddar cheese, Gruyere cheese, and Parmesan cheese, a little at a time, stirring until melted and smooth after each addition.
  • Stir in the salt, pepper, garlic powder, nutmeg, and mustard powder.
  • Add the cooked pasta to the cheese sauce and stir to combine.
  • If baking, pour the mac and cheese into a greased baking dish. Sprinkle with the optional breadcrumb topping.
  • Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown and bubbly.
  • Let stand for a few minutes before serving.
