Bright, zesty, and bursting with tart cranberries, these moist muffins are perfect for breakfast or a sweet snack.

Ingredients

  • 2 cups all-purpose flour (240g)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar (200g)
  • zest of 2 oranges
  • ½ cup milk (120mL)
  • ½ cup vegetable oil (120mL)
  • ¼ cup orange juice (60mL)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1½ cups fresh or frozen cranberries (180g)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a regular 12-cup muffin pan with paper liners.
  3. In a medium mixing bowl, whisk together the flour, baking powder, and salt until fluffy and well combined.
  4. In a separate larger bowl, add the granulated sugar and the zest of 2 oranges.
  5. Whisk the sugar and orange zest together for about one minute until combined and fragrant.
  6. Add the milk, vegetable oil, orange juice, eggs, and vanilla extract to the sugar mixture.
  7. Stir until all the wet ingredients are well combined.
  8. Pour the flour mixture into the wet sugar mixture.
  9. Stir until almost combined; it's okay if there are small lumps of dry ingredients.
  10. Fold in the fresh or frozen cranberries.
  11. Stir just until the cranberries are evenly distributed throughout the batter.
  12. Divide the batter evenly between the 12 prepared muffin cups.
  13. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  14. Let the muffins cool in the pan for a few minutes before removing them to a wire rack.

Notes

Do not overmix the batter; a few lumps are fine.
Rubbing the orange zest into the sugar enhances the citrus flavor.
Use an ice cream scoop to easily divide batter evenly.
If using frozen cranberries, do not thaw them first.
