A delightful and festive loaf cake, bursting with sprinkles and topped with a sweet vanilla glaze, perfect for holiday celebrations.

  • 1 cup granulated sugar
  • 2½ teaspoons vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • ¼ cup whole milk
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ⅔ cup Christmas sprinkles plus more for topping
  • 1¼ cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a 9×5-inch loaf pan with non-stick cooking spray.
  3. Set the prepared loaf pan aside.
  4. In a large bowl, cream together the softened butter and granulated sugar with a hand mixer until light and fluffy.
  5. Add the eggs and vanilla extract to the butter mixture.
  6. Mix just until combined.
  7. Mix in the sour cream and milk until incorporated.
  8. Set the wet ingredients mixture aside.
  9. In a separate large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  10. Add the dry ingredients into the wet ingredients.
  11. Stir until just combined and no flour streaks remain.
  12. Fold in the ⅔ cup of Christmas sprinkles gently.
  13. Do not overmix the sprinkles to prevent bleeding into the batter.
  14. Spread the batter evenly into the prepared loaf pan.
  15. Bake for about 60 to 70 minutes.
  16. The bread is done when a toothpick inserted into the center comes out clean and the top is golden.
  17. Remove the bread from the oven.
  18. Cool in the pan for 5 minutes.
  19. Transfer the bread to a wire rack to cool completely.
  20. While the bread cools, make the glaze.
  21. In a small bowl, whisk together the powdered sugar, 2 tablespoons heavy cream, and 1 teaspoon vanilla extract.
  22. Once the bread is completely cooled, spread the icing over the top.
  23. Smooth out the icing with a rubber spatula.
  24. Sprinkle with extra Christmas sprinkles if desired.
  25. Let the icing set before slicing.
  26. Slice and serve.

Ensure butter is properly softened for a fluffy crumb.
Measure flour by spooning it into the cup and leveling for accuracy.
Do not overmix the batter once flour is added to keep it tender.
