Ingredients

Scale
  • 2 lbs potatoes, Yukon Gold or Russet, cut into 1-inch cubes
  • 1 lb smoked sausage, Andouille or Kielbasa, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons ranch seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • Chopped green onions for garnish (optional)
  • Fresh parsley for garnish (optional)
  • Sour cream for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C). Lightly grease a large skillet or baking sheet.
  • In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper.
  • Spread the potatoes in a single layer on the prepared skillet or baking sheet. Add the sliced smoked sausage.
  • Bake for 25-30 minutes, or until the potatoes are tender and golden brown, flipping halfway through for even browning.
  • Remove from the oven and sprinkle the shredded cheddar cheese evenly over the potatoes and sausage.
  • Return to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly. For extra cheesiness, broil for 1-2 minutes, watching carefully to prevent burning.
  • Let the dish rest for a few minutes before serving. Garnish with chopped green onions, fresh parsley, or a dollop of sour cream, if desired.
