  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound carrots, peeled and chopped
  • 1 cup red lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the carrots, red lentils, cumin, coriander, turmeric, and red pepper flakes (if using) to the pot. Cook for 1 minute, stirring constantly, until fragrant.
  • Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender and the carrots are soft.
  • Remove the soup from the heat and stir in the lemon juice. Season with salt and pepper to taste.
  • If desired, use an immersion blender to partially or fully blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender and blend until smooth.
  • Serve hot, garnished with fresh herbs, a dollop of yogurt or sour cream, or a drizzle of olive oil.
