Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper, leaving an overhang on the sides for easy removal.
  • In a medium bowl, whisk together the yellow cake mix, all-purpose flour, and baking soda. Ensure there are no lumps.
  • In a separate, larger bowl, using an electric mixer, cream together the softened unsalted butter, light brown sugar, and granulated sugar until the mixture is light, fluffy, and pale, about 2-3 minutes. Beat in the large eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the pure vanilla extract until just combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix. Fold in both the semi-sweet and milk chocolate chips, and if using, the optional pecan halves, until evenly distributed.
  • Press the dough evenly into your prepared 9×13 inch baking pan. Bake for 25-30 minutes, or until the edges are golden brown and a wooden skewer inserted into the center comes out with moist crumbs but not wet batter. The center might look slightly underdone, which is ideal for chewiness. Let them cool completely in the pan on a wire rack.
  • While the bars cool, make the glaze. In a medium bowl, sift the powdered sugar. Add the milk, pure vanilla extract, melted butter, and a pinch of salt. Whisk thoroughly until smooth and pourable.   • Once the cookie bars are completely cool, lift them out of the pan using the parchment paper overhang and transfer to a cutting board.
