A vibrant and fresh summer salad featuring creamy burrata, sweet peaches, and juicy tomatoes, drizzled with balsamic glaze.

Ingredients

  • 3 ripe peaches sliced into wedges
  • 4 large ripe tomatoes, cut into large pieces
  • 1 ball of fresh burrata cheese, at room temperature
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white balsamic vinegar or balsamic honey vinaigrette
  • Fresh basil leaves
  • Fresh herbs (such as parsley or mint)
  • Kosher salt and freshly ground black pepper
  • Optional: a small amount of raw shallot, thinly sliced
  • Pine nuts for garnish
  • Balsamic glaze for drizzling

Instructions

  1. Wash and slice the ripe peaches into wedges.
  2. Wash and cut the large ripe tomatoes into large pieces.
  3. Cook the peach wedges through using a griddle pan until softened with grill marks. Alternatively, bake them in olive oil for about 20 minutes.
  4. Arrange the cooked peach wedges and tomato pieces on a large serving platter.
  5. Tear the burrata cheese into smaller pieces and place them on top of the salad.
  6. Drizzle the extra virgin olive oil over the salad.
  7. Drizzle the white balsamic vinegar or balsamic honey vinaigrette over the salad.
  8. Sprinkle with kosher salt.
  9. Sprinkle with freshly ground black pepper.
  10. Scatter fresh basil leaves over the salad.
  11. Drizzle with balsamic glaze.
  12. Optionally, add a small amount of thinly sliced raw shallot if desired.
  13. Optionally, sprinkle with pine nuts for garnish.
  14. Serve the salad immediately.

Ensure burrata is at room temperature for the best creamy texture.
Use very ripe peaches for optimal sweetness and flavor.
