2 pounds sweet potatoes
1 cup brown sugar (light or dark)
3 large eggs
1 (12 ounce) can evaporated milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 (9-inch) pie crust (store-bought or homemade)
Instructions
Preheat oven to 400°F (200°C). Roast sweet potatoes until soft, about 45-60 minutes. Let cool slightly.
Reduce oven temperature to 350°F (175°C).
Peel the sweet potatoes and mash or puree until smooth.
In a large bowl, combine mashed sweet potatoes, brown sugar, eggs, evaporated milk, melted butter, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
Pour the filling into the prepared pie crust.
Bake for 50-60 minutes, or until the edges are set and the center is slightly wobbly.
