  • 1 cup brown sugar (light or dark)
  • 3 large eggs
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 (9-inch) pie crust (store-bought or homemade)

Instructions

  • Preheat oven to 400°F (200°C). Roast sweet potatoes until soft, about 45-60 minutes. Let cool slightly.
  • Reduce oven temperature to 350°F (175°C).
  • Peel the sweet potatoes and mash or puree until smooth.
  • In a large bowl, combine mashed sweet potatoes, brown sugar, eggs, evaporated milk, melted butter, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  • Pour the filling into the prepared pie crust.
  • Bake for 50-60 minutes, or until the edges are set and the center is slightly wobbly.
