A delightful homemade toffee with a crunchy, buttery base topped with a smooth layer of milk chocolate and pecans.

Ingredients

  • 1 cup coarsely chopped pecans
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips

Instructions

  1. Spray a 9-inch square baking dish with cooking spray.
  2. Line the sprayed dish with parchment paper.
  3. Spread the coarsely chopped pecans in a single layer on top of the parchment paper.
  4. Add butter, granulated sugar, and kosher salt to a heavy-bottomed 3-quart pot.
  5. Bring the mixture to a boil over medium-low heat.
  6. Stir frequently to dissolve the sugar completely.
  7. Once the candy is boiling, stir occasionally, slowly and evenly.
  8. Continue cooking until the candy reaches 290°F to 300°F on a candy thermometer (hard crack stage).
  9. Remove the pot from the heat immediately when it reaches temperature.
  10. Gently stir in the vanilla extract.
  11. Carefully pour the hot toffee mixture evenly over the chopped pecans in the prepared baking dish.
  12. Let the candy sit undisturbed for a few minutes.
  13. Sprinkle the milk chocolate chips over the top of the warm toffee.
  14. Cover the baking dish with aluminum foil.
  15. Let it sit for 5 minutes, or until the chocolate has softened.
  16. Remove the foil.
  17. Gently spread the softened chocolate into an even layer using an offset spatula.
  18. Place the baking dish with the candy in the refrigerator.
  19. Let it cool completely for at least 2 hours.
  20. Lift the parchment paper out of the baking dish.
  21. Place the chilled toffee on a cutting board or solid surface.
  22. Use a knife to gently break the toffee into smaller pieces.
  23. Store the toffee in an airtight container in a cool place.

Notes

Use a heavy-bottomed pot for even heat distribution.
A candy thermometer is crucial for achieving the correct toffee texture.
Prepare your baking dish and pecans before starting the toffee mixture.
Do not rush the cooling process; fully chilled toffee is best.
