  • 1 pound lean ground turkey
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 28 ounces canned diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 15 ounces kidney beans, rinsed and drained
  • 15 ounces black beans, rinsed and drained
  • 15 ounces pinto beans, rinsed and drained
  • 2-3 tablespoons chili powder, to taste
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/4 – 1/2 teaspoon cayenne pepper, to taste
  • 4 cups beef broth
  • Optional toppings: shredded cheese, sour cream, Greek yogurt, chopped green onions, avocado, cilantro, tortilla chips

Instructions

  • Brown the ground turkey in a large skillet over medium-high heat. Drain off any excess fat.
  • Add the chopped onion and minced garlic to the skillet and sauté until softened, about 5 minutes.
  • Transfer the turkey and onion mixture to a slow cooker.
  • Add the bell peppers, diced tomatoes, tomato paste, kidney beans, black beans, pinto beans, chili powder, cumin, oregano, cayenne pepper, and beef broth to the slow cooker.
  • Stir to combine all ingredients.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Taste and adjust seasonings as needed. Add more chili powder for a deeper chili flavor, more cayenne pepper for heat, or salt and pepper to taste.
  • Serve hot, topped with your favorite toppings.
