Ingredients

  • 2 1/2 cups Gluten-Free All-Purpose Flour Blend (with xanthan gum)
  • 1/4 cup Tapioca Starch/Flour
  • 1/4 cup Potato Starch
  • 2 tablespoons Granulated Sugar
  • 2 1/4 teaspoons Instant Yeast
  • 1 teaspoon Salt
  • 1 cup Warm Milk or Non-Dairy Milk (105-115°F)
  • 2 large Eggs
  • 4 tablespoons Melted Butter or Dairy-Free Butter
  • 1 teaspoon Apple Cider Vinegar
  • 1/2 teaspoon Xanthan Gum (if not in flour blend)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, whisk together gluten-free flour blend, tapioca starch, potato starch, sugar, yeast, salt, and xanthan gum (if using).
  • In a separate bowl, whisk together warm milk, eggs, melted butter, and apple cider vinegar.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Lightly flour your hands and work surface. Turn the dough out onto the floured surface and gently knead for a few seconds to form a smooth ball.
  • Divide the dough into 12 equal portions. Shape each portion into a round roll.
  • Place the rolls in a greased 9×13 inch baking dish, leaving a little space between each roll.
  • Cover the baking dish with plastic wrap or a clean kitchen towel and let the rolls rise in a warm place for 30-45 minutes, or until they have slightly increased in size.
  • Bake for 20-25 minutes, or until the rolls are golden brown on top and sound hollow when tapped.
  • Brush the baked rolls with melted butter or dairy-free butter.
  • Let the rolls cool slightly before serving.
