A creamy, custardy baked yogurt dessert with a hint of tang and fresh berries, perfect for breakfast or a light treat.

Ingredients

  • 2 cups Greek yogurt
  • 4 large eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 1/2 cups berries divided

Instructions

  1. Preheat your oven to 350 degrees F (175°C).
  2. Line an 8×8 inch square baking dish with parchment paper and set it aside.
  3. In a large bowl, add the Greek yogurt, eggs, maple syrup (or honey), and vanilla extract.
  4. Whisk these ingredients until the mixture is completely smooth.
  5. Add the cornstarch to the bowl.
  6. Whisk again until the cornstarch is well combined and there are no lumps.
  7. Gently fold in 1 cup of the berries into the yogurt mixture.
  8. Pour the mixture into the prepared baking dish.
  9. Sprinkle the remaining 1/2 cup of berries evenly on top of the mixture.
  10. Bake for 45 minutes, or until the yogurt in the center is set and no longer jiggly.
  11. Remove the baked yogurt from the oven.
  12. Let it cool almost completely in the dish.
  13. Cut the baked yogurt into 9 slices.
  14. Serve as is, or with an extra drizzle of maple syrup.

Notes

Use full-fat Greek yogurt for the best creamy texture.
Ensure the baking dish is lined with parchment for easy removal.
Allow the baked yogurt to cool almost completely before slicing for clean cuts.
Do not overmix the batter once the cornstarch is added.
