  • Instructions

  • Cook the bacon in a large pot over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon fat in the pot.
  • Add the chopped onion to the pot and cook in the bacon fat until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Stir in the all-purpose flour and cook for 1 minute, creating a roux.
  • Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
  • Add the gnocchi to the simmering broth and cook until they float to the surface and are tender, about 3-5 minutes.
  • Reduce the heat to low and stir in the heavy cream and shredded cheddar cheese. Stir until the cheese is melted and smooth. Do not boil.
  • Season with salt and pepper to taste. Stir in most of the cooked bacon, reserving some for garnish.
