A decadent, no-bake dessert featuring layers of rich chocolate pudding, velvety ganache, and coffee-soaked cake.

Ingredients

  • 2 cups (480ml) milk
  • ½ cup (115ml) heavy cream
  • 1 cup (175g) dark chocolate, chopped
  • 3 tablespoon (30g) cornflour
  • 6 tablespoon (75g) sugar
  • 2 tablespoon (15 g) cocoa powder
  • 2 tablespoon (25 g) Butter
  • 1 teaspoon (5ml) vanilla
  • ½ cup (115ml) fresh cream
  • ½ cup ( 88 g) dark chocolate, chopped
  • 1 tablespoon (12g) instant coffee powder
  • 1 cup (240ml)warm water
  • 15 cake pieces
  • Cocoa powder for dusting

Instructions

  1. Combine sugar, cornflour, and cocoa powder in a large bowl.
  2. Whisk the dry ingredients together thoroughly.
  3. Place chopped dark chocolate, milk, and heavy cream in a heavy-bottomed saucepan.
  4. Heat the saucepan over medium heat until everything melts and is slightly warm.
  5. Gradually pour the warm chocolate mixture into the bowl of dry ingredients.
  6. Whisk continuously while pouring to combine the mixtures.
  7. Transfer the entire pudding mixture back into the saucepan.
  8. Bring the pudding mixture to a boil over medium heat.
  9. Whisk continuously until the pudding thickens.
  10. Remove the pudding from the heat and set it aside to cool slightly.
  11. For the ganache, place chopped dark chocolate in a bowl.
  12. Heat fresh cream in the microwave for 40 seconds.
  13. Pour the warm fresh cream over the chopped chocolate.
  14. Let the ganache mixture sit for 1 minute.
  15. Stir the ganache until everything is well combined and smooth.
  16. For the coffee soak, mix instant coffee powder and warm water in a bowl.
  17. Stir the coffee soak until the powder is fully dissolved.
  18. To layer the dessert, arrange the chocolate cake slices in a square dish.
  19. Brush or pour the coffee soak generously over the cake slices.
  20. Add a generous layer of the prepared chocolate pudding.
  21. Spread the pudding evenly from corner to corner of the dish.
  22. Add another layer of chocolate cake slices on top of the pudding.
  23. Pour the coffee soak over this second layer of cake.
  24. Spread the prepared ganache evenly from corner to corner over the cake.
  25. Cover the dish and allow the dessert to set in the refrigerator for at least 2-3 hours.
  26. Once set, dust cocoa powder on top before serving.

Notes

Use good quality dark chocolate for the best flavor.
Whisk the pudding constantly to prevent lumps and sticking.
Ensure the dessert chills for at least 2-3 hours for proper setting.
Dust with cocoa powder just before serving for a beautiful finish.
