  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 pound ground turkey
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 1 (15-ounce) can pumpkin puree
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can white beans, rinsed and drained
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado
  • Instructions

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, garlic, and bell pepper and cook until softened, about 5-7 minutes.
  • Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  • Stir in chili powder, cumin, oregano, and smoked paprika. Cook for 1 minute more.
  • Stir in pumpkin puree, diced tomatoes, white beans, and chicken broth. Season with salt and pepper to taste.
  • Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, to allow flavors to meld.
  • Serve hot with your favorite toppings.
