Instructions

  • Preheat grill to medium-high heat.
  • In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Rub spice mixture evenly over chicken breasts.
  • Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  • Grill corn for 10-15 minutes, turning occasionally, until kernels are charred.
  • While chicken and corn are grilling, prepare the lime crema. In a small bowl, whisk together sour cream, lime juice, cilantro, and garlic powder.
  • Once chicken is cooked, let it rest for 5 minutes before slicing.
  • Cut corn kernels off the cob.
  • Assemble the bowls by dividing rice or quinoa among four bowls. Top with sliced chicken, charred corn, avocado, and lime crema. Add desired toppings.
