Ingredients

  • Sweet Potato Puree
  • All-Purpose Flour
  • Pecans
  • Unsalted Butter
  • Granulated Sugar
  • Eggs
  • Baking Powder
  • Baking Soda
  • Cinnamon
  • Nutmeg
  • Cloves
  • Salt
  • Vanilla Extract
  • Buttermilk

Instructions

  • Preheat oven to 325°F (165°C).
  • Grease and flour a loaf pan.
  • Cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  • Stir in the sweet potato puree and pecans.
  • Pour the batter into the prepared loaf pan.
  • Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
