  • 1 pound green grapes
  • 2 cups granulated sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1/2 cup sour candy powder (for coating)
  • 2 tablespoons cornstarch
  • 2 tablespoons citric acid
  • 1/4 cup granulated sugar (for sour coating)

Instructions

  • Thoroughly wash your green grapes under cold running water. Pick them off their stems individually. Lay the clean, de-stemmed grapes out on a clean kitchen towel and gently pat them completely dry. Line a baking sheet with parchment paper or a silicone baking mat. Arrange the dry grapes in a single layer on the prepared baking sheet, making sure they aren’t touching each other. Pop this tray into the freezer for at least 2-3 hours, or preferably overnight, until the grapes are completely frozen solid.
  • In a small saucepan, combine 2 cups granulated sugar and 1/2 cup water. Place the saucepan over medium heat, stirring constantly until the sugar completely dissolves. Once the sugar has dissolved, bring the mixture to a rolling boil without stirring. You’ll want to reach a temperature of exactly 300°F (150°C) on a candy thermometer. As soon as it hits 300°F, remove the saucepan from the heat immediately. Swiftly stir in the 1 tablespoon lemon juice.
  • Carefully dip each frozen grape into the hot sugar syrup using a skewer or a toothpick, ensuring it’s fully coated. Let any excess syrup drip off before gently placing the coated grape back onto the parchment-lined baking sheet. Continue this process quickly with all the grapes. Once all the grapes are coated, let them sit at room temperature for a few minutes to fully set the candy shell, then transfer them back to the freezer for another 15-20 minutes.
  • In a shallow bowl or a small plate, combine 2 tablespoons citric acid and 1/4 cup granulated sugar. Use a whisk or a fork to thoroughly mix these two ingredients together until they are well combined and the sugar is evenly distributed with the citric acid.
  • Once your candied frozen grapes have had that final chill in the freezer for 15-20 minutes and their candy coating is perfectly firm, remove them from the freezer. Immediately, while the candy coating is still very cold and slightly frosty, gently roll each candied grape in the prepared sour coating mixture. Ensure every facet of the grape is covered in that vibrant, tangy dust. Arrange the finished, sour-dusted grapes back onto a clean parchment-lined tray. Serve them immediately for the best icy, juicy, sweet, and unbelievably sour experience!
