  • 1-2 Bay Leaf
  • 1 teaspoon Dried Thyme
  • Salt and Black Pepper to taste

  • Pick over and rinse the dried black eyed peas well. Soak them overnight or use the quick-soak method: boil for 2 minutes, then let sit for 1 hour before draining and rinsing.
  • In a large pot or Dutch oven, sauté the chopped onion and bell pepper in the rendered fat from the salt pork, bacon, or ham hock (or olive oil and smoked paprika for vegetarian) until softened.
  • Add the minced garlic and cook for another minute until fragrant.
  • Add the drained black eyed peas, water or chicken broth, bay leaf, and dried thyme to the pot.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 1-1.5 hours (or longer for unsoaked peas), or until the peas are tender and creamy.
  • Season with salt and black pepper to taste. Remember to remove the bay leaf before serving.
