  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1-2 green chilies, finely chopped (optional)
  • 2 teaspoons turmeric powder
  • 2 teaspoons cumin seeds
  • 2 tablespoons garam masala
  • 1 tablespoon ground coriander
  • 1 tablespoon tomato paste
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • Fresh cilantro, chopped, for garnish
  • Salt to taste
  • Oil for searing

Instructions

  • Heat a tablespoon of oil in a large skillet over medium-high heat. Sear the chicken pieces in batches until browned on all sides. Set aside.
  • In the same skillet, sauté the chopped onion until softened and translucent. Add the minced garlic, grated ginger, and green chilies (if using) and cook for another minute until fragrant.
  • Add the turmeric powder, cumin seeds, garam masala, and ground coriander to the skillet. Cook for 30 seconds, stirring constantly, until the spices are fragrant.
  • Transfer the seared chicken, sautéed aromatics and spices, tomato paste, coconut milk, and yogurt to the slow cooker. Stir to combine.
  • Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the chicken is very tender.
  • Stir in the lemon juice. Taste and adjust the seasoning as needed with salt.
  • Garnish with fresh cilantro. Serve hot with basmati rice, naan bread, or cauliflower rice.
