Ingredients

Scale
  • 1/2 cup Unsalted Butter
  • 2 cups Granulated Sugar
  • 5 ounces Evaporated Milk
  • 1/4 teaspoon Salt
  • 12 ounces White Chocolate Chips
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Unsweetened Cocoa Powder
  • 2 tablespoons Red Food Coloring
  • 7 ounces Marshmallow Fluff
  • 8 ounces Cream Cheese, softened
  • 3 cups Powdered Sugar
  • 4 tablespoons Unsalted Butter, softened
  • 1 teaspoon Vanilla Extract
  • 1/8 teaspoon Salt

Instructions

  • Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later. Lightly grease the parchment paper.
  • In a heavy-bottomed 3-quart saucepan, combine the unsalted butter, granulated sugar, evaporated milk, and a pinch of salt. Place the saucepan over medium heat, stirring constantly with a rubber spatula, making sure to scrape the bottom and sides of the pan. Continue to cook and stir until the mixture comes to a rolling boil.
  • Once it reaches a full boil, let it boil for exactly 5 minutes, still stirring continuously. The mixture will thicken slightly and become glossy.
  • After 5 minutes of boiling, immediately remove the saucepan from the heat. Quickly stir in the white chocolate chips, vanilla extract, unsweetened cocoa powder, and the vibrant red food coloring. Stir vigorously until the white chocolate chips are completely melted and the mixture is smooth and uniform in color. Add a tiny bit more food coloring if you desire a more intense hue.
  • Next, add the marshmallow fluff and stir it in until it is fully incorporated and the fudge mixture is smooth. Don’t overmix, but ensure everything is perfectly blended.
  • Working quickly, pour the warm fudge mixture into your prepared 8×8 inch pan. Using an offset spatula or the back of a spoon, gently spread the fudge evenly into the pan, making sure the top is smooth. Set it aside while you prepare the glorious cream cheese swirl.
  • To make the cream cheese frosting swirl: In a medium mixing bowl, using an electric mixer, beat the softened cream cheese and unsalted butter until light and fluffy, about 2-3 minutes. Make sure both ingredients are at room temperature.
  • Gradually add the powdered sugar, mixing on low speed until combined, then increase to medium-high and beat until smooth and creamy. Stir in the vanilla extract and a tiny pinch of salt to balance the sweetness.
  • Dollop spoonfuls of your freshly made cream cheese frosting over the still-warm but somewhat set fudge in the pan. Using a butter knife or a skewer, gently swirl the frosting into the fudge, creating beautiful, elegant patterns. Be careful not to over-swirl.
  • Once swirled to your liking, place the pan in the refrigerator for at least 3-4 hours, or ideally overnight, to allow the fudge to set completely. This ensures clean, sharp cuts and a perfectly firm texture.
