  • 170 grams (1 1/3 cups) all-purpose flour
  • 50 grams (1/4 cup) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 120 ml (1/2 cup) milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 cups vegetable oil (for frying)
  • 2 tablespoons powdered sugar (for dusting)
  • 60 ml (1/4 cup) coconut cream
  • 1 tablespoon fresh lime juice
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon shredded coconut

Instructions

  • Carefully peel and core the pineapple, then slice it into rings about half an inch thick. Alternatively, you can cut it into chunks if preferred. Pat the pineapple slices thoroughly dry with paper towels. Pour about 2-3 inches of vegetable oil into a heavy-bottomed pot or deep fryer. Heat the oil slowly over medium heat until it reaches 350-375°F (175-190°C), using a thermometer to monitor the temperature precisely.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined and lump-free. Create a well in the center of your dry ingredients.
  • In a separate medium bowl, whisk together the milk, large egg, and vanilla extract until smooth. This wet mixture should be uniformly combined, with the egg fully incorporated.
  • Pour the wet ingredients into the well of the dry ingredients. Using a whisk or rubber spatula, gently mix the batter until it’s just combined. It’s perfectly fine if there are a few small lumps; overmixing will result in tough fritters. The batter should have a thick, pourable consistency, similar to pancake batter, clinging lightly to a spoon. If it seems too thick, add a tiny splash more milk; if too thin, a pinch more flour. It should be thick enough to coat the pineapple generously without dripping off completely.
  • Ensure all your pineapple pieces are ready and your batter is mixed. Before frying, quickly test your oil temperature again to ensure it’s in the optimal range. Dip each pineapple slice into the batter, ensuring it’s fully coated. Carefully place 2-3 battered pineapple slices into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon or tongs to remove the fritters from the oil and place them on a wire rack lined with paper towels to drain excess oil. Repeat with the remaining pineapple slices and batter.
  • In a small bowl, combine the coconut cream, fresh lime juice, powdered sugar, and vanilla extract. Whisk vigorously until the mixture is completely smooth and creamy. Stir in the shredded coconut for added texture and a delightful tropical flair. Taste and adjust sweetness or tartness as desired.
  • Arrange the warm fritters artfully on a serving platter. A light dusting of powdered sugar over the top not only adds a touch of visual elegance but also a lovely, subtle sweetness.
