  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 – 1 teaspoon peppermint extract, to taste
  • Red food coloring (gel)

Instructions

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Divide the dough in half. Leave one half plain. Add red food coloring to the other half and mix until evenly colored.
  • Shape each dough half into a log. Wrap each log tightly in plastic wrap and chill for at least 30 minutes.
  • On a lightly floured surface, roll out each log into a rectangle. Place the red rectangle on top of the plain rectangle. Gently roll them together to create a swirl pattern.
  • Wrap the swirl dough log tightly in plastic wrap and chill for another 30 minutes.
  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Slice the chilled dough log into 1/4-inch thick cookies.
  • Place the cookies on the prepared baking sheet, leaving some space between each cookie.
  • Bake for 8-10 minutes, or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
